Cupcakes filled with blackberry jam
Preheat the oven to 160 ° C. Place 6 muffin tins in a tray and set aside.
In a large bowl, mix the flour with the baking powder, baking soda and salt.
In another bowl, mix the butter, then add the sugar gradually, until it becomes very creamy, then the egg.
Pour the dry ingredients over the wet ones and mix until everything is homogeneous. Add the yogurt, then the milk, stirring just enough to incorporate them.
With a spoon, divide the composition into prepared muffin tins. Bake for 20-22 minutes, until the toothpick test passes.
When they are ready, let them cool completely. Using a teaspoon, hollow the middle of them and fill with blackberry jam.
For the glaze:
In a large bowl, add butter, room temperature and vanilla essence. Mix it until it gets the consistency of a thick cream. Gradually add the powdered sugar, stirring well each time.
Add the whipping cream and continue mixing until you get a creamy and very fine glaze.
Decorate each cupcake with icing, fresh blackberries, jam and edible flowers!

How do we prepare the recipe for muffins with raisins and sesame?
The preparation method is extremely simple.
We start mixing whole eggs with sugar and salt until they become frothy. In turn we will add the oil, yogurt, baking powder and flour.
It is important to mix after each ingredient added.
After we have incorporated them all, we give up the mixer, add the well-squeezed raisins (we stop a few more for decoration) and mix with a spatula with wide movements. Distribute the dough obtained in muffin tins, place a few raisins on top of each muffin and sprinkle with sesame seeds.
Baking muffins with raisins and sesame
We will put the muffins in the preheated oven at 180 degrees Celsius for about half an hour, until they pass the toothpick test.
When they are ready, take them out of the oven and let them cool. If you want them to be a little sweeter, you can add an extra spoonful of sugar to the composition or you can powder them with powdered sugar.
Raisins can be replaced according to everyone's preferences, either with cherries, cherries, apples or chocolate flakes.
They are delicious anyway, you will be convinced of that.

How to prepare hot pepper jam
The preparation of this jam is quick and easy: clean the peppers: remove the stem, the internal white filaments and the seeds. Cut them into very small cubes, so you will reduce the cooking time. Do the same with hot peppers, but wear gloves.
In a non-stick pan pour all the ingredients of the jam: peppers, hot peppers, sugar, vinegar and water. Simmer over low heat for about 40 minutes, until vegetables are tender. If the water drains, pour more to prevent too much caramelization of the sugar. Walk around with the hand blender and finish squeezing your jam until it reaches the right consistency.
Pour into previously sterilized glass jars, close and turn over until cool. Check that the vacuum has formed before keeping it in the pantry, the hot pepper jam is ready.

Preheat the oven.
Beat the egg whites with a pinch of salt until they froth, gradually add the sugar, then the yolks and the oil, mixing with the mixer. Add the dry ingredients: flour and baking powder, mixing with a spoon from bottom to top. We will get a soft, fluffy and airy composition.
Pour the composition into a muffin tray in which I put muffin papers. Put the tray in the oven, on the right heat, for 20-25 minutes or until golden. When ready, leave to cool.
12 muffins are obtained.
For the cream: heat the whipped cream, pour it into a bowl, add milk chocolate (or any other favorite flavor) more or less, as everyone prefers (weaker or more intense). Mix well to melt the chocolate, then leave to cool. Then beat with the mixer until it becomes creamy like whipped cream.
Separately, beat another 100 ml of liquid cream with the mixer until it is consistent and good to decorate.
Dig out the core muffins, taking care not to drill them all the way. It is filled with ganache cream, it is decorated with whipped cream, orange peel kept in sugar in a jar, a little grated chocolate, candies and sugar flowers, which I made from fondant.
