This is a twist on a classic fajita recipe using prawns instead of beef or chicken. Serve with refried beans and Spanish rice to make an easy midweek supper!

- 1 1/2 tablespoons vegetable oil, divided
- 1 green pepper, sliced
- 1 red pepper, sliced
- 450g medium prawns - peeled and deveined
- 1 small onion, chopped
- 1 sachet taco or fajita seasoning
- 3 tablespoons water, or as needed
- 6 flour tortillas, warmed
MethodPrep:10min ›Cook:15min ›Ready in:25min
- Heat 1 tablespoon of oil in a large frying pan over medium-high heat. Add the red and green peppers, and onion. Cook, stirring frequently until peppers are hot, but still slightly crisp, about 5 minutes. Remove from the pan and set aside.
- Pour the remaining 1/2 tablespoon of oil into the pan, and add the prawns. Cook, stirring occasionally, until pink and opaque. Reduce heat to low, and return the peppers and onion to the pan. Stir in taco or fajita seasoning and water so that everything is evenly coated. Simmer until peppers are heated. Serve in warm tortillas.

Hi. I'm a regular on the US site, but found this recipe during a web search. I made it exactly as written (what a pleasant surprise to find that 450g of shrimp is just about equal to 1 lb. here). It tasted okay, but it wasn't as great as I'd expected. Maybe the packet (what you call a "sachet") of taco seasoning that I chose was too bland. Also, I used large (about 10 inches) flour tortillas, and the fajita filling wasn't nearly enough to fill them all, so I'd recommend that others choose smaller tortillas. Kind of a shame, because I love shrimp fajitas, and this recipe was just underwhelming, sorry.-11 May 2011

Easy Chicken Fajitas Recipe
Chicken Breast – 2 large cut into thin strips
Olive Oil – 3 tblspn
Garlic – 6 cloves chopped
Onion – 1 large sliced thinly
Green chillies – 1 chopped finely
Bell Peppers – 3 cups sliced thinly (i used red, green & yellow)
Chilli Powder – 1 tsp or to taste
Black Pepper Powder – 1 tsp or to taste
Cumin Powder – 2 tsp
Oregano – 2 tsp
Salt to taste
Sugar – 1 tsp
Parsley – 3 tblspn finely chopped
Lemon Juice – 2 to 3 tblspn
Tortilla for serving (regular or whole wheat)
Season chicken with salt and lemon juice and set aside.
In a pan, heat oil and add in onions and chillies and cook till transparent.
Now add in garlic and cook for couple of mins.
Add in peppers and cook that for 5 mins or so.
Now add in chicken and toss well. Keep cooking for 5 mins.
Add in all the spice powders, salt and sugar and mix well. Cook for couple of mins.

As you might know, we’re big fans of Mexican food in this household. Chilli is a big draw card but, in addition, the dishes are usually quick to make and very fresh and full of both vegetables and crunch. We’ll often have our chicken quesadillas as a quick, mid week dinner.
Last night I had prawns defrosted and ready to go and no opportunity to head to the shops (yes, thanks to Mr Sleepy Toddler again) so dinner had to be magicked up with whatever we could get from our local shop (excellent for basics, not so excellent for anything too exotic).
The first recipe that popped up in my delicious feed was prawn fajitas, from The Family Kitchen (link now lost to the ethernet I’m afraid). Excellent idea! We (naturally) had to do some tweaking (seriously, who puts together a Mexican recipe with NO CHILLI in it?) but in under half an hour* we had a very tasty meal ready to go.
We wouldn’t normally add fennel seeds to a Mexican dish but the combination of crunch and aniseed flavour was a big win. And, of course, if you don’t have prawns, substitute protein of your choice.
