I saw the zebra cake recipe one of the last days on Lorraine Pascale's show, whose fan I have been declaring for some time and I can't wait for the weekend to make my version of Zebra cake with vanilla and orange flavor.
Keeping the way the dough is placed in the tray, for the rest of the ingredients, I turned to imagination.
Anyway, even if I had wanted to, I couldn't follow her recipe because I was missing some ingredients and I had to improvise, I replaced the milk with liquid cream and cocoa with dark chocolate.
But my delicious and chocolate cake came out, a kind of mix between cake and blackberry, with vanilla and orange flavor.
I separated the yolks from the egg whites and put them in separate bowls.
I whipped the egg whites, then at the end I added half of the amount of sugar over them and I continued to mix until a glossy meringue formed. I put the egg whites aside and switched to yolks.
I mixed the yolks with the essences and the oil added gradually as in mayonnaise, I mixed lightly first at low speed and then at a higher speed, until I incorporated all the oil.
I then added the remaining amount of sugar over the yolks and mixed well until the sugar melted.
I put 75 ml of liquid cream over the yolks and then the flour mixed with the baking powder, I mixed the composition well and at the end I took a meringue spoon and incorporated it over the yolk mixture.
In a saucepan I put on the fire 50 ml of liquid cream in which I put the broken chocolate pieces, I let it heat up and then I mixed well until the chocolate melted completely.
I divided the dough into two parts, in one of them I put cocoa and chocolate mixed with liquid cream.
I took the shape of a cake, lined it with oil and flour and started to arrange the dough in it.
I put a spoonful of yellow dough first, then in the middle of it a chocolate dough, and in the middle of it again yellow dough and so on until I finished with all the dough.
I then put the cake in the oven over low heat, until it passed the toothpick test.

- 250 gr. - white flour (sifted)
- 200 gr. - sugar
- 100 gr. - soft butter
- 250 ml. - sour cream
- 3 small eggs
- 25 gr. - semolina
- 1 sachet - baking powder (10 gr.)
- 1 teaspoon vanilla extract (or 1 sachet of vanilla sugar)
- 20 gr. - natural cocoa
- Butter for greased tray
Method of preparation:
- Put the butter and sugar in a bowl and mix everything well until you get a creamy paste. Then gradually break one egg at a time. Then add the cream, vanilla essence and mix a little more.
- Add the solid ingredients: semolina, flour, a little salt, baking powder and mix everything together until the dough has no lumps, it is not necessary to mix more because the cake will not come out so fluffy.
- Take another bowl and pour almost half the amount of dough into it. Then add the cocoa and mix until completely incorporated.
- Take a tray with a removable bottom of 21-22 cm. lined with baking sheet and greased with butter. Put 3 tablespoons of vanilla dough (white) in the middle of the tray, then put two tablespoons of cocoa dough inside. Then put inside the circle with cocoa, two tablespoons of vanilla dough and so on until you finish the dough. At the end, beat the table tray a little to level the dough.
- At the end take a toothpick and draw lines from the center of the circle to the edges, so you get an interesting ornament.
- Bake the cake in the preheated oven at 170 degrees C for about 45-50 minutes.
