  • 20g granulated sweetener, such as Splenda
  • 80g porridge oats
  • 125g wholemeal flour
  • 45g soya flour
  • 1 3/4 teaspoons bicarbonate of soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 125g pumpkin puree
  • 1 tablespoon rapeseed oil
  • 2 teaspoons water
  • 2 egg whites
  • 1 teaspoon black treacle
  • 1 tablespoon linseed (optional)

  1. Preheat oven to 180 C / Gas 4.
  2. In a large bowl, whisk together sweetener, oats, wholemeal flour, soya flour, bicarbonate of soda, baking powder, salt, cinnamon and nutmeg. Stir in pumpkin puree, rapeseed oil, water, egg whites and black treacle. Stir in linseed, if desired. Roll into 14 large balls and flatten on a baking tray.
  3. Bake for 5 minutes in preheated oven. DO NOT OVERBAKE: the cookies will come out really dry if overbaked.

Ingredients

Soya flour and linseed (flax seeds) can be purchased in speciality shops or online.

This is a great recipe. My changes: 1/4 cup honey instead of splenda, a full cup of pumpkin, applesauce instead of oil, no water and 1 tbsp ground flax seed + 3 tbsp water instead of egg whites (let flax soak in water for 3-5 minutes before incorporating). Baked for 8-10 min. because of the extra pumpkin. Also, flax seeds need to be ground to make the nutrients available-21 Jan 2008

I wanted to comment on WANKO's comments that baking w protein powder "destroys" the protein... this is UNTRUE - it denatures it (changes the structure of the protein) but the amino acids remain the same... and baking is a better form of cooking w protein powder... as opposed to frying or other high heat methods...-06 Oct 2006

I left out the oil and put in 1/4c of honey instead of splenda. Also added 1.5 tsp of cinammon and about .5 more of nutmeg. and 1/4c more oatmeal... It's more like a sweet thick oatmeal bread... It does really cook in the 5 minutes too.-01 Jun 2006

  • Rolled oats:oats help the energy bites to hold their shape and give some healthy whole grains.
  • Cashew butter:cashew butter provides richness and healthy fats, but make sure to get unsweetened and oil-free. A lot of nut butters are full of junk you don’t need, so make sure the only ingredients are cashews and maybe a bit of salt.
  • Medjool dates:dates not only provide natural, fruit sweetness, but their sticky texture helps hold the energy bites together.
  • Pumpkin puree:you don’t need much since all the fall flavor really comes from the spice, but I figured we should throw in some actual pumpkin since they’re pumpkin spice energy bites, after all.
  • Pumpkin pie spice:warm pumpkin spices bring all the fall flavor to these energy bites.

No-Bake Pumpkin-Pecan Pie Paleo Bites

Pumpkin season is in full force and I couldn’t be happier about it! To celebrate, I made these No-Bake Pumpkin-Pecan Pie Paleo Bites.

It seems like the perfect time to make an easy, yummy, yet nutritious treat to enjoy all the warm, fabulous flavors of fall. Here, I have created a no-bake paleo pumpkin pecan pie bar that is out of this world DELICIOUS – and full of seasonal ingredients like pumpkins and pecans. I seriously cannot wait for you guys to try them for yourselves.

When it comes to pies, I am all about the crust. Seriously, I am way more into the crust than the filling! What about you? So I made a super-easy, yet absolutely decadent crust using just 3 ingredients: pecans, dates, and sea salt. Because the dates have some stickiness to them, they are really easy to work with and press down into the cupcake tins to make your little bites! And I just love the rich, buttery flavor of the pecans mixed with the sweet dates. It’s a combination made in heaven – and with pecan harvest in full swing, it’s the perfect time of year to buy fresh pecans!

The pecan and date crust is topped off with an absolutely delicious pumpkin spice combination, using only clean paleo-approved ingredients! After that, just pop them in the freezer, let them completely freeze for a few hours and when they are ready to eat, it will be love at first bite!

Since I am not much of a baker, nor do I claim to be (hah!) I love that these are no-bake, freeze only desserts making them completely fool-proof for not-so-good bakers like myself.

I already mentioned that these little bites are filled with clean ingredients and paleo-friendly, but also between the pecans and pumpkin have fiber. Did you know that compared to other major tree nuts, pecans are among the lowest in carbs (4 grams) and highest in dietary fiber (3 grams) per serving? I had no idea, but I just love that these sweet treats!

Instant Pot Pumpkin Bites

Fall is officially here! Break out all the pumpkin recipes! These bites remind me of the pumpkin chiffon pie my grandma makes every year for Thanksgiving dessert. Lighter in color, creamier and not as strong as pumpkin pie.

If you’re a fan of pumpkin cheesecake you’ll love these Instant Pot pumpkin bites! Basically it is pumpkin cheesecake filling cooked in silicone egg bite molds. Because they don’t have a crust these bites only have 97 calories per serving and they are quick to make. If you love pumpkin and chocolate together add in a handful or two of chocolate chips!

Tips to make the best Instant Pot Pumpkin Bites:

Don’t overbeat the egg: The key to getting a creamy cheesecake filling is to start with cream cheese that is at room temperature. Beat the cream cheese until it’s completely creamy and then add in the brown sugar, pumpkin puree, vanilla, pumpkin pie spice and salt and beat until creamy again. Add in an egg and flour and mix on low until the egg is barely incorporated. If you beat the egg too much it can lead to cracking.

Prevent condensation dripping onto the cheesecake bites: If you don’t cover your molds the cheesecake will have a lot of moisture on the top of it. I placed a paper towel over the mold and then covered with foil. The paper towel helped soak up the excess liquid. If you have a pressure cooker safe lid you can use that in the place of the foil, but I would still use the paper towel under the lid.

Refrigerate: Unfortunately, one of the steps to getting perfect pumpkin cheesecake bites is to refrigerating them for a couple of hours. Cheesecake will taste so much better if you give it some time in the fridge. Don’t try to remove the pumpkin cheesecake bites from the molds until they are cooled completely.

Freezing Instant Pot pumpkin bites: Cheesecake is freezable. If you’re lucky enough to have leftovers you can freeze them in an airtight container for another day.

Can I make homemade pumpkin pie spice? Of course! It will be much cheaper than buying it too. Here’s how:

Homemade Pumpkin Pie Spice

  • 4 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg

Mix all ingredients. Store in an airtight container in a cool, dry place up to 6 months.

I only have one egg bite mold, can I halve this recipe? This recipe makes 14 pumpkin cheesecake bites. You will need two molds to make my full recipe. I used 2 of these Instant Pot Silicone Egg Bites Pans*. However, if you only have one egg bite mold you can halve this recipe. Keep the amount of water in the bottom of the Instant Pot the same. Halve all other ingredients (for the egg, just use an egg yolk). Pressure cook for the same amount of time as stated in the recipe.

Can I use fat free cream cheese or Neufchâtel? I haven’t tried this recipe with a lower fat option. It might “turn out” but I don’t think it will taste nearly as good!
