Hello, today I give you the recipe to prepare croutons with cream of pumpkin and gorgonzola. I used rye bread as a base, rich in fiber and carbohydrates, I prepared a pumpkin cream enriched with grated parmesan and nutmeg and I combined it all with gorgonzola and rosemary needles.
I must say that the combination of things worked well and I brought to the table some really tasty croutons that met everyone's tastes;)
How to make croutons with pumpkin and gorgonzola
Once the pumpkin has been cleaned, cut it into cubes and cook it for 10 minutes in the microwave or steamed for the same amount of time.
Transfer it to a high bowl to be able to blend it together with the parmesan and nutmeg.
Cut every single slice of bread into two parts.
Form, on the crostini obtained, first a layer of gorgonzola and then a layer of pumpkin.
Add rosemary to your pumpkin and gorgonzola crostini and serve.

The ingredients are among my favorites at this time and obviously combine beautifully: the roasted pumpkin, very sweet but made spicy by the chilli pepper, the dark gorgonzola, the crunchy walnuts and the chestnut honey. Obviously you can use a sweet or spicy gorgonzola and the taste will change a lot. The type of pumpkin also affects the flavor: choose a non-watery one, which during cooking in the oven concentrates the flavor becoming sweet and pasty. 250 gr. from pumpkin
100 gr. from baked ham
extra virgin olive oil
Remove the skin from the pumpkin and cut into cubes. Put the pumpkin cubes in a saucepan, with the thinly chopped shallot, a little oil, salt, pepper and aromatic herbs. Add half a glass of water and cook until the liquid is completely absorbed. At this point the pumpkin should be already cooked, otherwise add a little more water and finish cooking.
Put the pumpkin in the blender jug, add the diced cooked ham and blend everything well.
Obtained a nice smooth cream, add the Parmesan cheese and mix it well with the cream. Prepare the slices of bread and with the help of a pastry bag with a large star spout, make lots of bows on the slices of bread.

GORGONZOLA PUMPKIN AND NUTS
Pumpkin season, what a fantastic food! So let's prepare this easy, colorful and tasty side dish together. As we all know, the pumpkin is also the symbol of halloween, carved to represent a grotesque expression, illuminated by a candle inside. And even though Halloween has been over for a few days, today I want to tell you the story of Jack O'Lantern. Jack Stingy was an Irish blacksmith with a bad temper, addicted to alcohol and gambling. One night, precisely on the 31st of October, on leaving a pub Jack met the devil, drunk, who had gone to visit him to reclaim his soul. Jack asked if he could have a last beer, but also told him he was broke. Then he proposed to the devil that he could transform himself into a 6 pence coin that featured a cross on one side. The stupid devil accepted and was imprisoned there. To redeem his freedom, he accepted the pact with Jack to postpone his death for a year. So it was: on October 31 of the following year the devil reappeared to him, when Jack challenged him to climb a tree and see if he was able to come down. Amazed by the ease of the undertaking and convinced that he would surely succeed, the devil accepted and climbed a tree beside him. Jack immediately carved a cross into its bark and the devil was again trapped. To be released he was forced to promise him never to bother him again. Years later Jack died and when he showed up at the gates of heaven no one let him in because of his life led in total recklessness. Then he went to hell, but at the door Jack found the very devil waiting for him who was so teased by him. For this reason he certainly did not let him in but nevertheless gave him a candle to illuminate his path in the dark limbo where he was destined to spend eternity. At this point Jack made sure that the candle lasted as long as possible. Then he dug out a gourd, carved his face of disappointment on it, and placed the candle there, like a lantern. It has since been nicknamed Jack O'Lantern, and on Halloween night you can see him wandering in the dark. For 3 people:
1 k of pumpkin
100 g of gorgonzola
50 g of walnut kernels
2 sprigs of thyme
3 tablespoons of oil
salt, black pepper
Remove the outer skin and seeds from the pumpkin and cut it into cubes, put it in the oven at 220 & # 176 for 35 minutes. If you can, however, I recommend that you use a microwave oven in order to significantly reduce time and energy. In this case, place the diced pumpkin with a finger of water in a baking dish and cover, cook at maximum power for 7 minutes, turning halfway through cooking. Leave to rest in the microwave at the end of the program for 3 minutes. Drain the pumpkin and place it on a baking sheet, season with salt, sprinkle with thyme and black pepper and sprinkle with oil. Arrange here and there some gorgonzola flakes and chopped walnuts. Bake the gorgonzola squash and walnuts at 180 & # 176 for 15 minutes. Serve hot.
