Pancakes stuffed with chicken breast

We put the milk gradually, gradually until it has incorporated well and then we add the mineral water and the oil in the same way as the milk.

From this dough we make pancakes, after leaving it to cool for about 15 minutes.

As long as the pancakes are warm, we fill them with the chicken composition.

We place the pancakes, one next to the other, on a tray greased with butter, we grease them with a well beaten egg with salt and we put them in the oven.

Let them simmer for about 10 minutes until lightly browned.

They are good both hot and cold.

Preparing pancakes

To obtain a fine dough, we first put flour, salt, then eggs and 50 ml of milk.
Mix well with a whisk until it becomes a dense and homogeneous paste. We add in two tranches the rest of the milk, at the end the melted butter. If we still have a few lumps left, we pass the dough through a strainer.
I recommend leaving the dough in the fridge for an hour, covering it with cling film and letting it rest. After an hour you will see that it is slightly more consistent than initially.
For frying pancakes you need a non-stick pan, I don't grease it with anything. Because I put butter in the dough, there is no need. If you still want, you can add a little butter to the first pancake.
Fry them over medium heat, about 1 minute on one side (or until the edges begin to come off) and then another half minute on the other side.
As you bake them, you can cover them with a kitchen towel so they don't dry out.

Prepare the filling

First we cut the onion and pepper into cubes. Then put a little oil and onion in a pan, let it cook for 3-4 minutes until it starts to soften. Add the peppers, and leave for a few more minutes.
Finally, grated garlic and diced chicken breast. Season with salt and pepper.
Add flour, mix well, after 30 seconds add cream.
Let it start to boil, and over medium heat for another 2 minutes. Then set aside the pan and let it cool slightly.


I got 5 pancakes out of this filling. You can also make 6 if you are more economical with the filling. Preheat the oven to 210 degrees.
So we fill the pancakes, bend the side edges inside, then roll them tightly.
